You’ve opened your veg box… tomatoes, garlic, onions, bits of this and that…

This is your go-to, no-fuss pizza night — fun, flexible, and seriously good.


Classic Pizza Dough (No sourdough, no stress)


Ingredients (makes 2 pizzas)


  • 500g strong bread flour
  • 7g dried yeast (1 sachet)
  • 1 tsp sugar
  • 1½ tsp salt
  • 2 tbsp olive oil
  • 300ml warm water


Method


  • Mix warm water, sugar, and yeast.
  • Leave 5–10 mins until slightly frothy.
  • In a large bowl, mix flour and salt.
  • Add yeast mixture + olive oil.
  • Bring together into a dough.
  • Knead for 8–10 minutes until smooth and elastic
  • (or 5 mins in a mixer)
  1. First rise
    • Cover and leave somewhere warm for 1 hour (until doubled)
  2. Shape
    • Divide into 2 balls.
    • Roll or stretch into pizza bases.


Simple Veg Box Tomato Sauce


Ingredients


  • 1 small onion
  • 2–3 cloves garlic
  • 4–6 ripe tomatoes (or a tin if needed)
  • Splash olive oil
  • Salt & pepper


Method


  • Finely chop onion + garlic and soften in olive oil
  • Add chopped tomatoes
  • Simmer 15–20 mins until thick
  • Season to taste

(That’s it — no need to overcomplicate)


Build Your Pizza


Spread your sauce, then top with whatever you’ve got:

  • Sliced courgettes
  • Onions
  • Peppers
  • Mushrooms
  • Tomatoes
  • Herbs (thyme, oregano, basil)

Then add:

  • Cheese (mozzarella, cheddar, or mix)
  • Optional bacon or sausage


Bake


  • Preheat oven as hot as it goes (220–250°C)
  • Bake for 10–15 minutes until golden and bubbling
